The purple color makes them easy to spot on the vines for harvesting. I like to harvest them below 8 inches long. Pods are flat and wide like Romano style pole beans. The entire pod is edible and has a crisp texture. The purple color is due to high quantities of an antioxidant called anthocyanins. The color does disappear when exposed to heat such as cooking. Therefore, I like to prepare in raw recipes to take advantage of the unique color. Pole beans are vining type beans that grow best on a trellis.
